Vegan Onion Poppyseed Crackers

 Onion Poppyseed Crackers – Vegan & Gluten Free

I had been looking for a good healthy cracker without wheat and other unhealthy ingredients. I found this recipe from YUM Universe and I couldn’t stop eating them, they are so good. Give them a try and let me know what you think. 

 Here’s the step by step details on how I went about making these delicious morsels. They are super easy to make with just a few ingredients. 

First step is to gather all your ingredients. This is called: Mise en place

Next step saute onion or shallots. I used shallots this time around. Both are really great tasting. 

Step 3, Add the sauteed onions to a large glass bowl, mix together all ingredients with a fork until dough forms. Use your hands to roll into a ball, and place it on one sheet of parchment paper.

cooking718 014Step 4 Place other sheet of parchment paper on top of dough and using a rolling pin, roll out until flat about 1/8 in. thick. Peel back top sheet of parchment. (Wipe it off and save it for later. You definitely will use it again) 

Step 5 Working on the bottom sheet of parchment, use a chef’s knife to carefully shape the dough into a rectangle on the paper.

Step 6 Score crackers shapes by pressing knife down into dough to create vertical lines about 1 1/2 in apart and then horizontal lines about 1 1/2 in apart. Slide the parchment and dough directly onto your baking sheet.

Step 7 Bake for 10 minutes, no longer. I tried longer to get them crispy but they dried out. So keep it to 10 minutes if you want a more moist cracker. You want to remove from oven just before crackers begin to brow. Allow to cool on the pan. 

I served these crackers with a vegan cheese made from macadamia and almonds. I use Kite Hill brand. Delicious!

Ingredients
  1. 2 cups almond flour
  2. 1/4 cup yellow onion, minced (shallots works too)
  3. 1 tbsp + 1 tsp unrefined coconut oil (I used grapeseed oil and it came out great)
  4. 2 tbsp water
  5. 1 tbsp poppy seeds
  6. 1 tsp fine ground sea salt (I used celtic salt for added minerals)
Instructions
  1. Preheat oven to 325 degrees. Lay out two baking sheet-sized pieces of parchment paper.
  2. Heat a saute pan to low to medium heat, add 1 tsp coconut oil (or grapeseed oil) and minced onion. Stir occasionally for about 7 minutes until browned. Add to a large glass bowl.
  3. Mix together all ingredients with a fork until dough forms. Use your hands to roll into a ball and place it on one sheet of parchment.
  4. Place other sheet of parchment on top of dough and using a rolling pin, roll out until flat, about 1/8 inch thick. Peel back top sheet of parchment. (Wipe it off and save it for another use) You will want to make these a few times.
